Start by mixing together
- 1 1/4 Cups of Milk (of your choice, can be darifree)
- 1 Egg
In a separate bowl mix together
- 2 bananas, mashed
- 2 tbsp cooking oil
Add the bananas to the Milk mixture
- 1 1/2 cup of flour (of you choice, can be Gluten free)
- 1 tbsp sugar
- 2 tbsp baking powder
- 1/2 tbsp baking soda
- 1/2 tbsp salt
- 1 tbsp cinnamon
Mix flour mixture into the Milk mixture
Heat griddle on medium until warm. Add a small amount of olive oil.
Pour batter by 1/2 cup circles and cook until bubbles begin to form and pop on the top of the pancakes. Flip and cook other side about 1 minute, until brown.
This recipe makes about 10 pancakes depending on how big you make them. I had everything I needed for this recipe already in my cupboards so it made it an easy go to recipe and a way to use up those browning bananas off my counter.
